Oreo Treats (yes i know this isn't a cupcake but oh so yummy)


Ingredients:
One package of Oreo Cookies
5 cups large marshmallows
4 tablespoons butter

Directions:
  • Butter an 8X8 inch baking pan. Line the baking pan with parchment paper letting the paper extend up two sides of the pan and overhang slightly on both ends. Butter paper; set pan aside.
  • In the bowl of a food processor fitted with the metal blade, pulse Oreos  until ground.
  • In a large, microwave safe bowl, melt butter and marshmallows in the microwave until puffed, about 1½ – 2 minutes. 
  • Stir in ground Oreo Cookies until combined. 
  • Transfer to prepared baking pan. 
  • Using a piece of wax paper, press rice mixture evenly into prepared pan.
  • Let set up for at least 10 minutes. 
  • Cut into bars and serve.

Banoffee (Yummy)

Ingredients:
½ cup plain or vanilla yogurt
½ cup mashed banana
1 cup white sugar
1 cup mashed bananas (about 2 ripe bananas, mash by hand with fork)
2 eggs
1 tsp vanilla essence
2 cups cake flour, sifted
1 tsp baking soda / bicarbonate of soda, sifted
½ tsp salt
Tin caramel condensed milk

Instructions:
1.      Preheat oven to 350 degrees F / 180 degrees C.
2.      Mix the 1st 3 ingredients together.
3.      Add the mashed bananas, eggs and vanilla essence.
4.      Mix until fairly smooth.
5.      In a separate bowl, mix the cake flour, bicarb & salt.
6.      Add dry ingredients to wet ingredients, mix well.
7.       Spoon 1/3 batter into muffin pans
8.      Dollop a teaspoon caramel condensed milk in centre
9.      Top with more batter to fill muffin pans 2/3 full.
10.  Spoon a dollop of caramel condensed milk on top of the batter.
11.  Bake for 15-20 minutes, or till skewer comes out clean.
12.   Let it cool in muffin pan for about 15 min, then take out and cool on wire rack.

Banoffee Frosting
3 cups icing sugar, sifted
¼ cup plain or vanilla yogurt
3 tsp caramel condensed milk
1 banana
Beat it all together in mixer, let it cool in fridge. When muffins are cooled down, drizzle
frosting over.

Cupcakes #1

What makes a cupcake so wonderful??
It could be its looks! It has to be nicely iced with pretty decorations. My favourite cupcake is a vanilla one with butter icing.

You can tell the difference between a bought cupcake and a homemade cupcake....ok ok except for Woolies cupcakes. Now for all of you out there do yourself a favour (actually maybe not) BUT try the Woolworthes new Banoffe cupcakes.............HEAVEN IN A MOUTHFUL!!

For me cupcakes are fun - I love icing them and making them all pretty.
Recently I made vanilla cupcakes with blue butter icing for my Fiance for his birthday and I loved baking them! Below is the recipe i used. I iced them with butter icing.

Quick easy cupcakes:


½ cup soft butter            salt
1 ½ cups flour                  2 tsp baking powder
⅔ cup sugar                     2 eggs
½ cup milk                       1 tsp vanilla

1) Put all ingredients into a bowl and beat for 3 mins. 
2) Fill cup cake pan about ⅓ full. 
3) Bake at 180ยบ C for 20 mins.

The start of my blog

I have created this blog because i love baking - especially cupcakes.
I will post every Friday because nowadays there just doesn't seem to be time, AND i have exams around the corner and a wedding :-D

This blog is where i will post recipes and photo's.
I would like to one day start my very own cupcake business.
This is just a fun blog where we can all share ideas.

Today is not Friday i know but watch this blog for a cupcake recipe on Friday........
